Last week, I received an email from Way Modern Chinois marketing peeps for an invite to try their Dim Sum Menu. Way Modern Chinois is a classy dim sum restaurant, I mean really classy. Located at the Ground Floor at Work @ Clearwater (formerly known as Wisma Antah) which is just a few metres walk away from Gate 2 of the National Palace, this modern Chinese contemporary dim sum restaurant is championed by its head chef, Chef Kent Chan.
Chef Kent Chan ambitious effort was quickly evident when he presented us with his first dim sum, the âSkinlessâ XLB for RM6.00. This molecular recreation of the Shanghai soup dumpling doesnât look anything similar to the ordinary Shanghai soup dumpling. But it sure do taste the same like the ordinary Shanghai soup dumpling. Donât take too long inspecting this dim sum because you wonât be able to figure out what is what. The soup and meat were molecularly converted into this bite sized jelly-like sphere which burst in your mouth. Whereas the vinegar and ginger dip were turned into foam. Right on top of the dim sum is a piece of skin, giving us a hint of the skin texture of the ordinary Shanghai soup dumpling.
Already impressed with Chef Kent Chanâs dim sum, we were served with this Crispy Dumplings with Wasabi Mayo next for RM15.00. It has the perfect skin – crispy textured skin with generous amount of fillings. And each of these little darlings were served on a dob of wasabi flavored mayonnaise.
Chef Kent Chan didn’t fail to amaze us with yet another amazing creation of his, the Prawn Dumplings with XO sauce.
These golden color Crab Roe Dumplings were neatly packed with crab roe and prawns. I have no idea what these black âthingâ sitting on top of these dumplings but they were a great dĂ©cor for these dumplings.
Now what are these odd looking dumplings. These are actually Truffle Crab Soup Dumplings. The concept is similar to the Shanghai soup dumpling where the savory crab soup were contained inside the dumpling. The black skins are possibly made of squid inks. The crab soup was savory and the skin was sweet and together they made a great tasting combination. 4 pieces of Truffle Crab Soup Dumplings â RM14.00.
Sticky Rice Lamb Siew Mais. They almost look like a very messy sushi. These sticky rice lamb siew mais are loaded with flavors. The pungent smell and heavy taste of the lamb made each and every grain of sticky rice really flavorful. It was chewy and it was gamey. But it was bearable. This is actually quite an enjoyable dish.
Crab Claw Dumplings at RM15.00. Each see-through dumplings were generously loaded with crab claw flesh and prawns. They were one of the great tasting dim sums that day.
This is my first time having a coriander Char Siew Bao and I was pleasantly surprise with how well the bun actually taste. The aromatic smell of the coriander and the savory fillings of the bun are simply not to be missed. It was pretty good.
The Seafood Curry Nest is not the typical curry we normally have. They taste more like the Japanese curry. Each fluffy and crispy ânestâ were packed with seafood curry. I wish they had used our Malaysian curry instead of a very light sweet version of a curry.
These may look like your normal nuggets but they are actually a recreation of the Fish and Chips. Instead of using flour and etc to coat the cod fish, mash potatoes were used to wrap the cod fish and thereafter fried in hot oil. I think the chef should do a little bit of change here as the mash potatoes layer was too thick that the outer layer was crispy but the inner layer was mushy. The mushiness of the mash potatoes with the cod fish made this dish a bit of a letdown.
I have nothing to complain about the Lotus Leaf Steam Sticky Rice with Duck. It was quite good. It was tasty, filled with colorful ingredients â duck meat, mushrooms, etc. nicely wrapped with a big piece of lotus leaf. Presentation wise, it looked very appetizing.
Crispy Bean Curd Skin Roll was quite average. Good crispy skin with delicious fillings.
