Coquo’s Special 4-Course Healthy Menu – RM188++ per person
The course starts with a Mixed salad, duck ham, pickle radish and anise vinaigrette. The duck ham is cured for more than a month and is only sliced during time of service. The radish used in this mixed salad is organic radish which has been cured for a day before it is marinated with an infusion of extra virgin oil (a mix of lemon, orange, rosemary, thyme, garlic, bay leaf, star anise and cinnamon). The whole thing is then mixed with star anise vinaigrette.
The next item is the Roasted eggplant, smoke dry fish, garlic baby spinach leaf with sambal oil. This rish in calcium, iron and magnesium dish is created with the idea of intensifying flavours of local vegetables. All the vegetables are sourced from A Little Farm On The Hill (a farm in Malaysia). Even the smoked fish is from Pulau Ketam. It may seem like a dish that uses imported ingredients, but it is not.
The Sea bream, lemongrass bouillabaisse and laksa caviar came next. The sea bream is sourced from Pulau Ketam and is marinated and served with a bouillabaisse (a classic fish stew from France using shellfish, thus giving it a sea flavour. The sea bream was infused with lemongrass and top with some laksa caviar.
The course ends with Roasted pumpkin ice cream, tropical fruit macedonia and homemade goat milk yogurt. This is a no added sugar ice cream and is made only with pumpkin roasted over night in charcoal, bringing out its natural sugar. The pumpkin ice cream is served with tropical Macedonia which is made with juice from tropical fruits and transferred into small balls wih liquid nitro and served with Goquo’s homemade goat milk yogurt.
Again, this special course is only available for a limited time. It is best shared with family and friends and best enjoyed with specialy paired wine from their wine bar cellar.
